Quinoa Broccoli Soup




Quinoa Broccoli Soup (dairy free)

4 cups chopped broccoli
4 cloves garlic, whole
2 tbls EVOO
2 cups vegetable stock
2 cups water
2 cups almond milk
1 carrot, shredded
1 stalk celery, shredded
1 whole onion, chopped
9 TBLS nutritional yeast
1 cup Quinoa
Salt and Pepper to taste
Hot Pepper Flakes (optional)
*1 tsp Mrs Dash Grillin' Chicken Seasoning*(see end notes)

Preheat Oven to 415 degrees. In a bowl mix broccoli and garlic with 1 TBLS EVOO, salt and pepper. Place on sheet pan and roast about 10-15 minutes until just slight color on items. Meanwhile in a stockpot, add 1 tbls EVOO, onion, carrot and celery. Saute until onion is translucent. Add vegetable stock, stir. Take broccoli out of oven. Smash the cloves and mince to break apart. Add broccoli and garlic to pot, stir. Add 2 cups water and quinoa. Cover and simmer 10 minutes. Take lid off and add almond milk and nutritional yeast 2 tablespoons at a time while stirring. Taste as you go adjusting salt and pepper. After the 9th TBLS stir and replace lid. Low simmer/boil about 5 minutes more. Serve with hot pepper flakes for some spice. * *I also used some Mrs Dash Grillin' Chicken seasoning but I love extra flavor! If desired you can add it to the pot with the quinoa or at the end as desired. I used about 1 tsp. It was more of a shake thing so use according to your taste.**
