Black Bean Soup

2 cans organic black beans
3 cups vegetable stock
2 round tomatoes, chopped (not Roma, we want juicy tomatoes)
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1/2 large onion, chopped
3 cloves garlic, chopped
1 tsp cumin
1/2 tsp smoked paprika
1 tsp Adobo
1/2 tsp chili powder
2 chili's in adobo sauce, chopped
Handful Cilantro, diced
1/2 tsp lime juice

In stockpot add tomatoes, onions, peppers and garlic. Saute until tomatoes break down and liquid is gone. Add cumin, paprika and chili powder. Saute a couple seconds, stirring around making sure not to burn spices. Add Chipotle peppers, stir and quickly add vegetable stock and black beans with liquid. Use an emersion blender to blend everything in pot. Add last can of black beans with liquid. Do not blend them. You want them whole. Add adobo, stir. Cook uncovered for 30 minutes on medium low heat to reduce liquid. Once soup is to your desired thickness add cilantro and a 1/2 tsp lime juice if desired. I personally live the zing of lime. Stir.
