Roasted Whole Cauliflower



Roasted Whole Cauliflower @rachelsclevercreations

1 whole cauliflower, rinsed and dry
Sauce:
2 tbls Dijon mustard
2 tbls. Apple cider vinegar
1 tsp onion powder
1 tsp garlic powder
1 tsp basil
1 tsp Oregano
1 tsp dried chives
1/4-1/2 chipotle powder (depends on how much kick you want!)
Salt & Pepper to taste
Combine Sauce ingredients and pour over cauliflower and rub it into all the crevices. Bake 415 degrees for 40 minutes or until fork tender.
I was able to cut through mine no problem and then I proceeded to eat half of it! The flavors are delicious! I love the brown crispy seasoning that fell off of it!
