Spaghetti Squash Chicken Parmesan



A 2 in 1 dinner! I made chicken Parmesan sandwiches for the family, and I also used the chicken for my yummy spaghetti squash dinner.

Chicken Parmesan-crockpot
4 chicken breasts
1 jar organic marinara sauce
1/2 tsp garlic powder
1 tsp dried Basil
Place all ingredients in crockpot. Cook low 6-8 hours. Chicken Serves 4-5 people
Options to prepare:
*shred chicken and top with mozzarella or Provolone cheese on a toasty bun.
*serve whole breast (or shredded) with a nice slice of mozzarella or provolone cheese on top of a bed of spaghetti or spaghetti squash (I used vegan mozzarella cheese)

Spaghetti Squash:
Preheat oven 415°
Cut spaghetti squash in half. Scoop out seeds. Lightly cover in oil, salt & pepper. Poke holes randomly in skin of squash. Bake flesh side down for 15-20 minutes until skin looks a bit wrinkly. Take out and cool. Flip over and shred squash making "noodles" eat with your favorite spaghetti toppings!
