Southwest Vegetable & Chicken Soup




This soup has AMAZING flavor! Makes about 6 servings or more... Its so addicting!
Southwest Vegetable & Chicken Soup @rachelsclevercreations
1 lb chicken breast, whole
1 can 14.5 fire roasted tomatoes
1 small green bell pepper, chopped
2 cups sliced carrots
5 cups chicken stock (or broth)
1 tablespoon cumin
1/2 tsp turmeric
1/2 tsp chipotle chili powder
1 7.5 is can green chili's
1 small onion diced
2 cloves garlic, minced
1 cup Italian green beans
1 cup broccoli florets
4 cups chopped cabbage
1 tablespoon lime juice
Salt and pepper to taste
Cilantro to garnish
In Stockpot add first 11 ingredients. Cover and bring to boil. Reduce to simmer and cook for 20 minutes. Take chicken out and shred. Add cabbage, broccoli and green beans. Cover and simmer for 20 minutes. Add chicken and cover heat through for 5 minutes. Add 1 tablespoon lime juice. Stir. Salt and pepper to taste.
