Thai Peanut Zero Noodles for 1 via: @rachelsclevercreations
1 Chicken Breast, cooked and shredded
1 Carrot, shredded
2 green onions, chopped
½ red bell pepper, julienned
Sesame Oil
Sauce:
2 cloves garlic minced
2 tbls. Chili garlic paste (add more if desired)
1/2 tsp. ginger, minced
¼ cup coconut aminos
2 tablespoons organic peanut butter (1 more to taste if
desired)
2 tbls. Rice wine vinegar
1 tbls. Honey
Cilantro & Peanuts as garnish
Rinse Zero noodles thoroughly. Combine Sauce ingredients;
set aside. On medium heat, add 1 tsp sesame oil, saute carrot, ½ chopped green
onion, and red bell pepper. Add chicken and heat through. Add sauce ingredients. Heat through until bubbly. Taste
and adjust seasonings. Add in Zero Noodles; stir until incooperated and cook for 2-3 minutes longer. Serve with
garnish cilantro and peanuts on top.
