Quinoa and Sweet Potato for 1 person via

1/4 onion, diced
1 garlic clove, minced
1/2 to1 sweet potato, diced in squares (1 cup)
Handful spinach, chopped
5 crimini mushrooms, diced
Salt & Pepper to taste
Evoo or Vegan butter
1/2 cup cooked quinoa (follow directions on back of bag)
1 egg
Sauce:
2 tsp dijon mustard
1/2 tsp thyme
1 tsp olive
1/2 tsp apple cider vinegar
1/8 tsp onion powder
Salt and pepper to taste
Saute onion in some evoo or vegan butter. Add garlic and
sweet potato, mushrooms, s&p. Cook until potato is soft and cooked through.
Add spinach and cook until wilted. Meanwhile, whisk sauce ingredients very
well. Once potatoes are done add in 1/2 cup quinoa and sauce. Stir gently to
combine. Taste. Add salt and pepper to taste. Cook egg medium so that yolk is
still runny. Place on Top of potatoes. Serve.
