Cajun Chicken, Peppers & Quinoa via rachelsclevercreations
4oz. Chicken breast, chopped into bite size peices
1/4 white or purple onion, chopped
1/2 each, red, yellow, green pepper, diced
1 clove garlic, minced
1 medium tomato, chopped
1/4 tsp. plus 3/4 tsp. Creole seasoning
1/4 tsp garlic powder
1/4 tsp black pepper
Evoo
1 cup cooked quinoa
*cilantro & 1/4 a lime wedge for garnish
In saute pan cook chicken in Evoo with 1/4 tsp Creole
seasoning, garlic powder and black pepper until browned and cooked through. Set
aside in bowl. In same saute pan with evoo add bell peppers, onion, chopped
garlic and tomatoes. Add 3/4 creole seasoning. Cook on medium high heat until
tomatoes are broken down and it looks like a thick sauce. About 5 minutes. Add
chicken and quinoa. Stir to combine and heat through. Serve. * You can easily double
this recipe for 2 people or quadruple for a family of 4!
