Hamburger Stroganoff

The Original Recipe:
I probably got this off of the Cooking for your Family board a long time ago. I have had the recipe in my files, and I make it every now and then. I don't know what it was about this time I made it, but everyone loved it. I even had company (my 7 yr. old neice was here), and she loved it, too. She had 2 bowls full!! Quick and easy. I made it as is, and boiled my noodles in water with a low sodium/no msg beef bullion cube for some extra flavor. I also used no msg can of cream of mushroom soup and light sour cream.

HAMBURGER STROGANOFF


1.5 lbs ground beef

1 med onion, chopped

2-3 cloves garlic, minced

1 tsp. Worstershire sauce (or to taste)

butter

2.5 tsps salt (I have tried to reduce that salt, but it just doesn't taste right)

1 Tbls flour

1/8 to 1/4 tsp pepper

1 can healthy request (no msg) cream of mushroom soup (optional-you can also use beef bullion cubes and some water with more flour to thicken it up and add even more flavor)

1 C Light Sour Cream

1 sm can mushrooms (optional)

In a med saucepan saute onion and garlic in butter til softened. Add ground beef, salt and pepper and brown, Add flour to thicken. Mix in cream of mush soup (you can use cream of chicken if you like. My husband hates mushrooms, and the chicken works fine for us.), and the mushrooms if you are using them. Simmer for about 10 minutes. Add sour cream and heat through. Serve over cooked egg noodles.

I got this off of the Cooking For Your Family Board, and it was brought to my attention as something that just had to be made! It is very different, ingredient wise, than what I normally make for my family. I don't think my kids (other than my 13 year old) has tried olives before! It is delicious! It is salty from the olives, but the flavor is so very different. I couldn't put my finger on it, when I was making it, as to what I thought it would turn out like. Wow, I would make this my number 1 pot roast if it were up to me. I LOVED eating a peice of olive with each bite of roast. The roast just melted in my mouth!
So, from my kids point of view, they say they don't like it, especially the olives (which I only gave them each 1 to try). However, I have to say, I am NOT fighting with them to eat like I normally do. They are all eating their supper tonight. I think they like it, but because it is different they say they don't like it. I have to beg to differ at this point since their plates are wiped clean!


Special Spanish Pot Roast

3lb beef pot roast

8oz bottle Catalina salad dressing, divided

6-8 carrots, peeled and diced

6-8 potatoes, peeled and diced

1 onion, quartered

12oz jar green olives with pimentos



Heat 1/4 cup dressing in an oven safe pan over medium heat. Add roast to pan; heat and turn until all sides are browned. Add carrots, potatoes and onion to pan. Pour remaining dressing over all; top with olives and olive juice. Cover and bake at 350 for 2 to 3 hours to desired doneness. Serves 4 to 6

Crockpot Pizza

The Original Recipe:
I haven't made this in a long time. I forget why I haven't, but my kids love this. It is so easy, too. Everything is cooked right in the crockpot.

Crockpot Pizza


Ingredients

1 box Rigatoni, partially cooked

1 1/2 lb. ground meat

1 lg. pkg Sliced pepperoni (I use turkey pepperoni)

1 Green bell pepper chopped

1 lg. pkg Shredded mozzarella cheese

2  jars of pizza sauce

1 Medium onion chopped

(optional can mushrooms)

Preparation

Stir all ingrediants together in large crockpot. Cook on low for 3-4 hours.

Cookie Dough Icing

The Original Recipe:
I saw this on my blog list; cookingwithcarrie.blogspot.com. Yum and yum and yum. Need I say more? I used boxed brownie mix, and topped with the cookie dough frosting. I added a bit of vanilla to my icing, and I loved it. I could eat a whole bowl full of this stuff with out the brownies! I even made this for a party all ready. It is a definite hit!

Cookie Dough Frosting


Ingredients

1/2 cup butter, softened

1/2 cup packed brown sugar

1/4 cup granulated sugar

3 tablespoons milk

1/2 teaspoon salt

1 cup flour

1 cup chocolate chips



Directions

Mix the butter, sugars, salt, and milk together. Mix in the flour until combined. Stir in the chocolate chips. Spread on top of cooled brownies. Keep any left overs in the refrigerator.

The Origianal Recipe:
My stepmom gave his recipe to me. Her sister gave it to her. This is the first time I have ever made them, and I must say, way easy!! I thought it would take a bit longer, but I just plopped them right in my cast iron skillet after I cooked my fish, and voila, they were done!

Hushpuppies



½ cup cornmeal

½ cup flour

2 tsp. baking powder

½ tsp. salt

¾ cup milk

½ cup onion (chopped fine)

1 egg

Mix all ingredients together. Heat frying oil and drop spoonfuls into hot oil. Fry until crispy brown.

Long John Silver Fish Batter

Long John Silver Fish Batter

The Original Recipe:
I found this on Recipezaar.com, and my family thought it was so good! Everyone enjoyed fish this night. The next night I reheated the leftovers in our toaster oven, and the kids ate it on buns for fish sandwiches. I fried ours in my cast iron skillet with some canola oil. Perfect!

Long John Silver's Fish Batter Recipe #42780

SERVES 4 -6

• 3/4 cup flour

• 2 tablespoons cornstarch

• 1/4 teaspoon baking soda

• 1/4 teaspoon baking powder

• 1/4 teaspoon salt

• 3/4 cup water

1. Sift dry ingredients.

2. Add water and mix well.

3. Use to coat fish or chicken filets.

4. Cover the fish completely.

5. Deep fry until a nice golden brown.

Chicken Tuscany

The Original Recipe:
My one son brought home this cookbook that was called Country Italian. Well, I am not crazy about Italian food, but flipping through the book I found a recipe that actually was something everyone ate! I think it helped that he made it. It inticed him to eat more than he probably would have if I would of made this on my own. His little brother wolfed it down and had seconds. I think he set the world record in our family for eating the fastest that night!

Chicken Tuscany

3-4 chicken breasts, cubed
1 can tomato sauce
1 medium red pepper
1 packet golden onion soup mix
1 small can mushrooms
1/2 cup orange juice
2 Tbls. Brown Sugar

Preheat oven 350 degrees. In 13x9 baking dish layer chicken, red peppers and mushrooms. In bowl mix OJ, Onion soup Mix, brown sugar and tomato sauce. Pour over chicken. Bake 45 minutes uncovered or until chicken is no longer pink. Serve over white Rice.
