Grilled BBQ Ribs and Fried Mac & Cheese

MMMMM...MMMMM...MMMMM

The Menu:
Grilled BBQ Ribs and Fried Mac & Cheese

preparing the cheese balls

The Original Recipe:
Well, this is not a home made rib sauce recipe, but it is fast and very scrumptious. I marinated my ribs in the fridge all day and then grilled them. I do have a home made bbq recipe that I LOVE, so I will have to share that another day...
Also, on our side burner on the grill I fried up some of this Mac & Cheese from a recipe I found on Recipezaar. It is DELICIOUS!! I hope you try these. My 7-year-old ate 3 of them, and he is the one that doesn't like mac & cheese, lol...

BBQ Ribs

1-2 lbs. bonless pork ribs
1 cup Sweet Baby Rays BBQ sauce
1/3 cup KC Master Piece Honey Teriyaki marinade

Combine and marinate for atleast 4 hours. Grill meat until no longer pink. I grilled at 350 degrees for about 30 min.

Fried Macaroni and Cheese Balls Recipe #275813

This is a recipe from Paula Deen's magazine. Plan ahead, you will need to refrigerate the cheese sauce for 8 hours and the balls freeze for 2 hours. The chilling and freezing time is included in the prep time listed.

½ day 35 min prep
SERVES 66 , 5 1/2 dozen

4 quarts water
1 teaspoon
salt, divided
2 cups uncooked
elbow macaroni
1/2 cup
milk
3 tablespoons
milk
1 (12 ounce) package
cheese spread, cubed
1 cup
mozzarella cheese, shredded
1/4 teaspoon
ground black pepper
4 large
eggs
2 cups Italian seasoned breadcrumbs
1/2 cup
yellow cornmeal peanut oil, for frying

Lightly grease a 13x9-inch baking dish. In large saucepan, bring water and 1/2 t salt to a boil over high heat. Add pasta, and cook 6-8 minutes, or until tender; drain well.
In a large bowl, combine hot cooked pasta, 1/2 cup milk, cheese spread, mozzarella cheese, 1/2 teaspoon salt and pepper; stir until cheeses are melted. Spoon into prepared baking dish; cover, and refrigerate 8 hours.
Roll macaroni and cheese into 1-inch balls; place on a baking sheet, and freeze 2 hours.
In a small bowl, whisk together eggs and remaining milk.
In a separate small bowl, combine breadcrumbs and cornmeal.
Dip balls into egg mixture, then dredge in breadcrumb mixture.
In a large Dutch oven, pour oil to a depth of 2 inches; heat to 350 degrees over medium heat.
Fry macaroni and cheese balls in batches, 3-4 minutes, or until golden brown. Drain on paper towels.

8-Layer Salad

The Menu:
8-Layer Salad

The Original Recipe:
This is something I just picked up from parties. I asked what was in it, and well, this is what I did. It is usually called a 7-layer salad, but somehow I got an extra layer! I think it is a great way to add a salad to a supper, but it isn't your typical side salad.

7-Layer Salad

1 head lettuce, shredded

1/4 cup vidalia onion, chopped

1 green pepper, chopped

2 stalks celery chopped

2 cups mayonaise mixed with 2 tsp. white sugar
1 cup frozen peas
16 oz. soft bacon bits
2 cups shredded cheddar cheese

Mix the mayonaise and sugar together; set aside. In a 13x9 dish arrange the ingredients in order as listed above, topping with the cheese. chill and serve.

Update:

With Summer upon us, I just want to apologize for not updating like I should. I do have some dishes to share, but we have been so busy. I was out of town for the past week and half, and I promise I will update as soon as I get settled again.

Thanks!
