Country Fried Cube Steaks

These are an old favorite around here. I grew up eating these down on the farm (I can say down on the farm, because I live just up the hill from the farm I grew up on!!! ha-ha) Anyway, I hope you enjoy them just as much as we do.

The Original Recipe:
I learned to do this from my stepmom, many many years ago....

Country Fried Cube Steaks

2 eggs
2 cups flour
1 tsp. garlic powder
1 tsp. onion powder
1/4 tsp. salt or to taste
1/4 tsp. pepper or to taste
1 cast iron skillet
enough canola oil to coat about 1/3 up the pan (maybe about 1 cup)


Pour oil into skillet. Heat until oil is very hot, I would say on medium high. Test it by sprinkling a few drips of flour into the oil, if it bubbles and sizzles around, you are hot enough. You do not want it to smoke, though, that is to hot!
Whisk flour in bowl, set aside. In another wide bowl, combine flour, garlic, onion, salt and pepper. Dredge cube steaks in egg, then in flour mixture coating the steaks. Add to the skillet and cook until crispy brown on each side and you no longer see any pink comming out of the middle as it frys. I would say about 3-5 minutes on each side.
